The Ritz-Carlton Maldives, Fari Islands presents a feast fit for a true gourmand as the resort welcomes two culinary masters this summer. These exclusive residencies are part of the property’s established Masters of Crafts series. The series presents the globe’s most acclaimed stars of food and drink, wellness, adventure and environmental innovation and are meticulously curated as a collection of guest experiences that embody the essence of transformative travel.

Chef Pam Pichaya Soontornyanakij, awarded Asia's Best Female Chef 2024, will be the first chef to take over The Ritz-Carlton Maldives, Fari Islands’ Summer Pavilion, the acclaimed Indian Ocean outpost of Singapore’s Michelin-starred venue at The Ritz-Carlton, Millenia Singapore. On August 10th and 11th, Chef Pam will showcase her culinary skills from Bangkok’s POTONG (ranked #17 in Asia’s 50 Best Restaurants) in a setting famed for its design and culinary heritage. Matteo Cadeddu of Opium (ranked #59 in Asia’s 50 Best Bars) will serve his expertly crafted cocktails at the resort’s iconic EAU Bar on August 9th and 10th.

The first and youngest female chef to simultaneously receive both a Michelin Star and the "Opening of the Year" award from the Michelin Guide, Chef Pam will be presenting a delectable eight-course tasting menu that highlights her innovative Thai-Chinese cuisine. The opulent surroundings of the resort are the perfect backdrop for an unforgettable sensory experience. Guests will enter through Summer Pavilion’s circular 'moon-gate' entrance, winding their way through the water court and garden before stepping into a lantern-lit dining room that appears to float above the crystal-clear waters of the Indian Ocean.

Chef Pam’s menu, reflecting her signature storytelling, will feature a variety of dishes like 'POTONG’s Pad Thai,' which blends tradition and innovation in Thailand’s national dish, and 'Yin Yang Noodle' that evokes childhood memories with morels and creamy chicken broth. Courses include POTONG’s evolution of crab and five-spices squab, followed by desserts like Pam’s chocolate sphere.

“I’m so thrilled to bring POTONG’s flavours to The Ritz-Carlton Maldives, Fari Islands and to its incredible culinary scene. To be part of the resort’s dedication to culinary excellence and exploration is a real privilege, and to offer this from Summer Pavilion, a restaurant rich in Cantonese culinary heritage, feels a very organic meeting of sensibilities,” says Chef Pam.“I hope to bring an element of surprise to guests through my menu. When people think of Thai food, they think of northern, southern, central or north-eastern, but Thai-Chinese is a sub-cuisine. Chinese people have been migrating to Thailand for over 800 years and they’ve brought a lot of food culture with them. I’m excited to showcase my menu - 5 Senses, 5 Elements, A Journey Through Time - in this unique setting, for a truly unparalleled and thought-provoking dining experience.”

In a delectable pairing, Matteo Cadeddu of Opium will take over The Ritz-Carlton Maldives, Fari Islands’ EAU Bar. The Bangkok jewel, which has appeared frequently on the extended list of Asia's 50 Best Bars, brings its incredible drinks inspired by “liquid surrealism" to the property’s Behind the Bar series. Just in time to watch the sun set, Cadeddu will present a stellar selection of libations poolside. Beverages will include the adventurous, "Han Solo" that combines mezcal, pineapple Tepache, lime, honey, soda, and orange bitters as well as "Incognito" that has a mysterious mix of gin and bergamot liqueur.

EAU Bar is an incredibly memorable spot to enjoy a celebration of the world’s sublimest sips. The resort’s daily sunset ritual, featuring a Bodu Beru performance of Maldivian drums and an Instagram-worthy flaming ceremony, provides an unforgettable backdrop.
